Directions:

  • cut up leftover chicken into pieces
  • roll out tortilla wraps (whole wheat, white or gluten-free corn wraps)
  • add your favourite salad dressing (ranch, ceasar or oil and vinegar work best)
  • add fresh cut up vegetables such as red or green bell peppers, cucumber, lettuce
  • sprinkle some grated cheese (cheddar or marble)

Depending on how much chicken you have leftover, you can make several wraps by combining a little of each of the above-noted ingredients into a long row within the wrap. Roll each wrap tightly, heat in microwave if desired and cut each wrap in half. Enjoy a healthy and quick meal! What a delicious way to use up your leftover chicken and enjoy a great meal!
